With Florida strawberries in peak season and at a great price, I'm sharing one of my favorite Strawberry Salad recipes. I got this Strawberry Salad recipe from Cooking Light years ago. Cooking Light is a great source of quick and healthy recipes. Strawberries are a great source of vitamin C, and packed with other antioxidants and nutrients like potassium, folate and fiber. While low in calories, and naturally sweet, they are a great addition to any plate. I've substituted baby spinach for the romaine lettuce when I've had spinach on hand and it's just as good. Substituting Splenda … [Read more...]
What is The Glycemic Index (GI) and Glycemic Load?
Let’s talk about something that so many people misunderstand: The Glycemic Index (and it’s partner Glycemic Load). Has someone told you not to eat carrots because they are full of sugar? Many people quit eating them when the book “SugarBusters” came out. It had to do with the glycemic index (GI). As the low carbohydrate diet fad changed over time we began to hear more about Glycemic Index. Let me tell you what it is, along with the concept of glycemic load. The Dietitian’s Husband Strikes Again, in the Kitchen!
It’s been about three years since I last hijacked my wife’s post so I felt that the time is right to tell you about my recent adventures in nutrition. As a quick review, I followed my wife’s advice and lost 35 pounds (slowly and fitfully). I have now kept it off for several years (I’ve lost count). I did it without giving anything up, including dessert. I recognize that I have an unfair advantage…a wonderful dietitian wife who is an incredible cook. However, she is so good to me that I started feeling guilty. I used to soothe that guilt by occasionally taking her places, including out to … [Read more...]
Christmas Cookie Recipe: Spicy Christmas Cut-Outs
Your dietitian is actually going to share her favorite Christmas Cut-Out cookie recipe. It’s not sugar-free. No fruit or secret healthy ingredient is added. So why would I do such a thing? I want to share. This is a great recipe that I have been making for over four decades. I love that it’s easy to roll out and work with. It holds my favorite memories. It reminds me of my mother who taught my sister and I to bake. She didn’t love to cook but made dinner for eight every night. Meals were always balanced. When I didn’t know what to major in college she just told me to study nutrition. … [Read more...]
