There is more than ONE way to eat healthy with Diabetes! Last weekend I attended a a Nutrition Conference which had me saying....wait…what? Here I was, listening to a guy with diabetes who keeps his carbohydrate intake as low as possible all the time. No starchy vegetables, grains, fruit, dairy or sweets. With Florida strawberries in peak season and at a great price, I'm sharing one of my favorite Strawberry Salad recipes. I got this Strawberry Salad recipe from Cooking Light years ago. Cooking Light is a great source of quick and healthy recipes. Strawberries are a great source of vitamin C, and packed with other antioxidants and nutrients like potassium, folate and fiber. Deciding What to Eat, Even When you Have Diabetes
Did you know people with diabetes can eat muffins, even if they are not low-fat or sugar-free? People with diabetes can eat anything. (Think portion control). However, everyone benefits from eating healthy food in reasonable portions. It is not necessary to have sugar-free foods, or low calorie or low fat options. What to eat is a personal choice.
