Chili Salmon Sheet Pan Dinner Recipe
Serves four
Hands-on time 20 minutes
Total time 30 minutes
Ingredients
1 1/2 tablespoons chili powder
1/2 teaspoon dried oregano
1/4 teaspoon kosher salt
One large sweet potato, scrubbed and cut into 3/4-inch cubes
2 tablespoons canola or sunflower oil, divided
1 head broccoli, cut into florets or 2 cups frozen broccoli florets
1 pound sustainably-sourced salmon fillets, fresh or thawed
Directions
1. Preheat the oven to 420°F. Line 2 rimmed baking sheet with parchment paper.
2. Mix the chili powder, oregano, and salt in a small bowl.
3. Toss the sweet potato in a large bowl with 1 tablespoon of oil and 1 teaspoon of seasoning mix. Spread out on one baking sheet and slide into the oven.
4. In the same bowl, toss the broccoli with the remaining tablespoon of olive oil and another 1 teaspoon of seasoning. Spread out on the other baking sheet and put in the oven. Set the timer for 5 minutes.
5. Rub the remainder of the seasoning mix onto the salmon. When the timer goes off, toss the sweet potatoes and broccoli. Slide them over, and add the salmon to the sheet pans.
6. Remove the salmon from the sheet pans when it is nearly done, 8 to 10 minutes, depending on the thickness, and tent with foil. Keep roasting the vegetables until they are as crisp as you like them, about five minutes more.
