I love old recipes that remind me of my sweet Mom. I found one of her favorites to share. Our next door neighbor Mrs. Pennington made it first. After she gave it to Mom it was in the regular rotation when our big family got together and she needed something she could make ahead that was easy and delicious.
When I found my handwritten version on one of Mom’s recipe cards I went online to double check the specific directions. (The recipe card said it was from Food to Die For). The recipe was not available, but I was fascinated to learn more about the award winning book “Food to Die for: A Book of Funeral Food, Tips and Tales from the Old City Cemetary, Lynchburg, Virginia“.
I have such fond memories of growing up in Lynchburg and my dad taking the grandkids to that public cemetary to swing on the giant swing. I’ll be adding yet another interesting cookbook to my collection that I may just read for fun, or to find a recipe that is great for a crowd.
Okay, back to the Ramen Broccoli Slaw recipe…. It tastes great and holds up well. I think it’s fine for people with diabetes and others who are health conscious. It includes healthy fats with almonds and canola oil, and veggies. I don’t usually buy Ramen noodles, and would never use the whole seasoning packet if I was eating them according to package directions because of the sodium. However, in this recipe you are adding veggies so it works well. Like a lot of handwritten recipes, I can’t be sure of how much it varies from the original, but this is how I make it and it’s a winner.
Ramen Broccoli Slaw
Add these ingredients to a large bowl:
- 12 oz package broccoli slaw
- 5 green onions, chopped
- 1/2 cup of slivered almonds, toasted and cooled
- One package chicken flavored Ramen noodles, broken
- Dressing
Whisk together:
- 3 tablespoons tarragon (or other white vinegar)
- 1/2 cup canola oil
- Seasoning packet from Ramen noodles
- 3 tablespoons sugar (I use Splenda)
- 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
Pour dressing over broccoli mixture and stir to blend.
Chill for a couple hours.
