With Florida strawberries in peak season and at a great price, I'm sharing one of my favorite Strawberry Salad recipes. I got this Strawberry Salad recipe from Cooking Light years ago. Cooking Light is a great source of quick and healthy recipes. Strawberries are a great source of vitamin C, and packed with other antioxidants and nutrients like potassium, folate and fiber. While low in calories, and naturally sweet, they are a great addition to any plate. I've substituted baby spinach for the romaine lettuce when I've had spinach on hand and it's just as good. Substituting Splenda … [Read more...]
Deciding What to Eat, Even When you Have Diabetes
Did you know people with diabetes can eat muffins, even if they are not low-fat or sugar-free? People with diabetes can eat anything. (Think portion control). However, everyone benefits from eating healthy food in reasonable portions. It is not necessary to have sugar-free foods, or low calorie or low fat options. What to eat is a personal choice. Christmas Cookie Recipe: Spicy Christmas Cut-Outs
Your dietitian is actually going to share her favorite Christmas Cut-Out cookie recipe. It’s not sugar-free. No fruit or secret healthy ingredient is added. So why would I do such a thing? I want to share. This is a great recipe that I have been making for over four decades. I love that it’s easy to roll out and work with. It holds my favorite memories. Favorite Ramen Broccoli Slaw Recipe
I love old recipes that remind me of my sweet Mom. I found one of her favorites to share. Our next door neighbor Mrs. Pennington made it first. After she gave it to Mom it was in the regular rotation when our big family got together and she needed something she could make ahead that was easy and delicious. When I found my handwritten version on one of Mom's recipe cards I went online to double check the specific directions. (The recipe card said it was from Food to Die For). The recipe was not available, but I was fascinated to learn more about the award winning book "Food to Die for: A Book … [Read more...]
